Berry Cheesecake in a Jar



 Summer is finally here and last week we were invited to a neighborhood pot luck.  I always like to bring something homemade and I thought about making my Blackberry Peach Cobbler  in a jar. Hmm, but I've been wanting to try these cute little cheesecakes and I happened to have all of the ingredients on hand! I actually read through several different recipes found on Pinterest but some gave the measurements in grams (?), a couple called for whipping cream and I was out, and most only made 6 and I was headed to a party. So, here is my version. 
They were very easy and a real hit! 

Defrost a frozen bag of mixed berries and throw in a few sliced fresh strawberries too if you have them. Honestly, any of your favorite fruit for the topping would work. Add a couple of tablespoons of powdered sugar and let them render some juice.

 Beat one 8 oz package of room temperature cream cheese until smooth. Add in 1 cup of plain Greek yogurt , 2/3 cup powdered sugar 1 tsp vanilla extract and 1 tsp lemon juice. Then beat until combined and smooth.

 Make a classic graham cracker crust by combining the crumbs from 6 whole graham crackers with 1/4 cup melted butter and 1 tablespoon granulated sugar. Gently press a couple of tablespoons into 12 clean 8 oz jam jars.

Top the graham crust with several spoonfuls of the cream cheese mixture. Lastly add the berries.

I did thicken my fruit by pouring the defrosted fruit juices into a small saucepan. I added 2 tablespoons of cornstarch and brought to a simmer until slightly thickened. Then folded back into the berries and topped off the cream cheese. Chill until ready to serve.
 It's so easy to screw on the jar lids and take to a party. You can gild the lily by adding a dollop of whipped cream but it's not necessary.

These are cool and creamy, perfect for a summer evening!


Berry Cheesecake in a Jar

 8 oz pkg cream cheese
1 cup plain Greek yogurt
2/3 cup powdered sugar
1 tsp vanilla
1 tsp lemon juice

6 graham crackers
1/4 cup melted butter
1 tablespoon sugar

fresh or 10 oz frozen berries defrosted
2 tablespoons powdered sugar
2 tablespoons cornstarch

8-  8 oz jam jars

In a mixer beat  cream cheese, yogurt, powdered sugar, vanilla and lemon juice until smooth.

Crush graham crackers until fine. Add melted butter and sugar to combine. 

Sprinkle powdered sugar on fruit and allow to defrost and render juice. Pour off juice into small saucepan and add cornstarch. Bring to a simmer until thickened. Fold into berries.

Layer  graham cracker, crust cream cheese mixture and berries into 12 jam jars. Chill. Top with whipped cream if desired.

Serves 8

March Dinner Party

Two weeks ago I hosted a small party for several friends who all have spring birthdays. I chose a St. Patrick's Day theme but this would easily work for any springtime luncheon.

 I pulled out a charming vintage tablecloth that I found once while thrift shopping. It is cross stitched with colorful spring flowers.

 My favorite place settings are my mix and match white ironstone and mix and match vintage silverware.

 A few pots of primroses are perfect nestled in an old toolbox. 

To go along with an Irish theme I served Loaded Potato Soup
 Martha Stewart's  Irish Soda Scones ,

fresh artisanal bread, 


and spring greens with apples, mandarin oranges and berries.
To top it off, one of my favorite make ahead desserts, 





I bagged up Rolo candies and attached a vintage card with an Irish blessing wishing everyone luck.
It was a fun and pretty way to welcome spring!

Fresh Strawberry Pie

Many, many years ago I volunteered with our church's girl's youth group. We had a fundraiser every year to help the girls earn money for summer camp. We sold pies. Fresh strawberry pies for Mother's Day. Dozens of pies. Actually, one year, two hundred pies!  I've fiddled with the recipe a little, but it is very easy and one to add to your summertime dessert list.

Start with a pre baked pie shell. I prefer Pillsbury, but you can use a frozen one or make your own from scratch.

Next I add a layer of sweetened cream cheese. You can omit this part, but I find it keeps the crust from getting soggy and adds a lovely creaminess to the sweet berries.



Add freshly washed, dried and hulled strawberries on top of the cream cheese mixture. I keep most of the berries whole and really pile them high! 

Here's my real secret - Danish Dessert. Have you ever used this before? It's a bit like Jello, a bit like pudding. It can be hard to find, look in your local specialty grocery store. I've also seen it online. I tend to like the raspberry flavor, it's not quite as sweet as the strawberry.

Cook according to package directions. It takes about 5 minutes.

 Then gently ladle the warm glaze over the strawberries allowing it to fill in all the nooks and crannies of the pie.

Refrigerate until well chilled, several hours. 
Then top with fresh whipped cream. 

 Fresh , cool and sweet - a perfect summer dessert!
The recipe

Fresh Strawberry Pie

One pre baked pie shell
2 pounds fresh strawberries, washed and hulls removed
one package Junket Danish Dessert
4 ounces cream cheese at room temperature
1/4 cup sugar
1/2 tsp vanilla
1/2 cup heavy cream whipped

In a mixer beat cream cheese with sugar and vanilla. Fold in pre whipped cream. Spread cream cheese mixture into cooled pie shell. Add strawberries piling high. Make Danish Dessert according to package directions. While still warm ladle over berries. Chill. Serve with whipped cream.

Madeleines



Is it a cake? Is it a cookie? They are French Madeleines, sort of a cross between the two. They are light and buttery little shells with a touch of lemon and are very easy to make.


 Basic ingredients, you probably have all of these on hand. They combine to make a creamy batter.

The key is having one of these Madeleine molds. You can buy one of these special pans at kitchen or baking supply stores.

Bake until the edges start to brown.


Remove the cookies from the pan and cool completely , then dust with powdered sugar.

And enjoy!

Lemon Madeleines
1/2 cup melted butter
2 eggs
1 cup flour
3/4 cup sugar
1/4 cup plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon grated lemon rind
1/4 tsp salt
powdered sugar

Grease Madeleine pan. Preheat oven to 400 degrees. In a large bowl beat eggs, sugar, yogurt, and lemon juice until light and lemon colored about 5 minutes. Add flour, lemon rind, salt, and melted butter. Mix until well blended. Spoon 1 tablespoon batter into each shell. Bake 10-12 minutes until edges start to brown . Remove to wire rack to cool. Grease pan again before refilling. Dust cookies with powdered sugar. Makes 30-32 cookies.

Lemon Blueberry Cake

A birth and a death. That's what happened in my neighborhood yesterday. We celebrate one and mourn the other. And we do it by taking food to the families.
 So this morning I baked.

Blueberries were on sale last week at my local market so I stocked up and froze some for the future and left some to eat fresh. Perfect for some Lemon Blueberry Cake. One of my favorite cookbooks is the Cake Mix Doctor. You know, the one that takes ordinary cake mixes and with a few modifications turns them into something special.  I added my own twist to come up with this recipe.


Start with a box of lemon cake mix, add Greek yogurt, eggs, oil, and  water. Dump it all into the mixer and mix for 3 or 4 minutes. Then fold in one cup of fresh blueberries. 

You can make one bundt cake but I chose to do several mini cakes, easy for giving.




 I'm so grateful for good neighbors and that we share our lives, both the joys and the sorrows. I'm also grateful for the faith that assures me that one day we will be reunited with those whom we have lost. That's what Easter is all about.


Lemon Blueberry Cake
1 box lemon cake mix
1 cup plain Greek yogurt
1/2 cup oil
1/4 cup water
4 eggs
1 tsp vanilla
1 cup blueberries

Mix everything except the blueberries in mixer 3-4 minutes. Fold in blueberries. Pour into 5 mini loaf pans.
Bake at 350 for 30 minutes or until golden. Cool, then dust with powdered sugar.

Big Soft Ginger Cookies


Last week I took these cookies to my neighbor's Cookie Exchange and I wanted to share the recipe. These cookies are a family favorite, with the recipe coming from an old Better Homes and Gardens magazine that featured my father-in-law's cousin, Winnifred Jardine. Winnifred was an amazing cook who had a regular cooking column in the newspaper. I've taken her original recipe and "kicked it up a notch" by dipping it in white chocolate. Either plain or dipped they are the perfect Christmas cookie, soft, chewy and full of holiday spices!


The ingredients - flour, ginger, baking soda, cinnamon, cloves, butter, sugar, an egg and molasses.
The process is like any regular drop cookie - cream butter with the sugar, add the egg and molasses and beat well. Add the flour, baking soda, salt and spices. Mix until well combined.

 Roll dough into balls and dip or roll in sugar. I like to use sanding sugar, the crystals are a bit bigger.

Bake at 350 for 10 minutes.

 Let cookies cool completely, then melt a bag of white chocolate chips acccording to package.


Dip each cookie into the white chocolate and place on a 
sil-pat or wax paper to dry.


 These package up beautifully for gift giving- 
if they last that long!

Big Soft Ginger Cookies
2 1/4 cups flour
2 tsp ground ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3/4 cup butter at room temp
1 cup sugar
1 egg
1/4 cup molasses
2 Tbsp sugar

Combine flour, ginger, soda, cinnamon. cloves salt; set aside.
In a large mixing bowl cream butter and sugar until fluffy. Add egg and molasses. Slowly add flour mixture and combine thoroughly.
Shape into 1 1/2 inch balls and roll in additional sugar. Place on cookie sheet and bake at 350 degrees for 10 minutes until light brown and puffed. (Do not over bake!)
Cool completely on rack. If desired, dip into melted white chocolate and cool until set.
Makes 2 dozen large cookies.
