Park City-Park Silly Market


We come to Utah every summer to spend at least a couple of weeks. One of our favorite spots is Park City. Many of you may know Park City as a world class ski resort and home to some of the 2002 Winter Olympic events, but I love it in the summertime! There is always something fun going on from hiking, biking, eating, swimming, concerts, theater and shopping! 
Every Sunday all season long Park City hosts the "Park Silly Market" right on Historic Main Street. 
Here are a few pics of what was going on right outside our hotel yesterday.

We shared a croissant for breakfast, but there are food vendors galore with other tasty treats.

There was lots of fun people watching, from the old cowboy showing his artwork,

Solar Oven Pulled Pork

Are you familiar with solar oven cooking? When the temps in Arizona hit the "teens" I refuse to use my oven! Instead, I started experimenting with solar oven cooking a couple of years ago. I don't claim to be an expert, but it really is quite easy. There are a couple of brands of solar ovens out there. I happen to have the SOS Solar Sport Oven.

Basically, you put your ingredients into an enameled pan and into the oven and point it at the sun! It cooks slowly like a crock pot  but only uses energy from the sun and doesn't heat up your kitchen.
Here is my favorite easy dinner-

Slice raw potatoes and carrots  into pot. Drizzle with olive oil and add fresh rosemary, thyme, salt and pepper.
Into a second pot put a whole pork loin and pour on your  favorite bottled barbecue sauce. Yes, that's right, I make this as easy as possible! 

Put the lids on, place in oven and point to the sun. I usually put it out about 10 or 11 in the morning and let it cook all day, about 6-8 hours. You can see the thermometer in the oven is up to 300 degrees.

Here are the vegetables steaming hot and tender. 

Shred the pork with a couple of forks. You can add more sauce to your preference.  

And here it is served up on a bun. So tender and yummy!

I've also baked bread, made cherry cobbler, corn on the cob etc. Most recipes that you make in a crock pot can be adapted to solar oven cooking. It's an initial investment but never wears out and is totally energy efficient. It's also perfect for camping.
